Shrimp & Asiago Toast

The sweetness of the shrimp paired with the melty sharpness of the Asiago cheese is a perfect pairing. This is great as an appetizer, canapé or a winter warmer snack.

Ingredients

  • ½ lb shrimp, peeled and cleaned
  • 4 oz Ontario Asiago, grated
  • 1 shallot
  • 2 cloves garlic
  • ¼ c. parsley, chopped
  • 1 tablespoon lemon zest, approx. 1 lemon
  • 1 tablespoon salt
  • ¼ c. butter
  • 4 slices sourdough bread or brioche
  • Salt and pepper to taste

Method

Preheat oven to broil or 450ºF.

  1. Bring water to a boil in a small. Add 1 tablespoon salt.
  2. Poach shrimp in boiling water until pink, about 2 minutes.
  3. Melt butter in a pan and cool to room temperature.
  4. Remove shrimp from water and chill.
  5. Roughly chop shrimp and place in a medium
  6. Finely chop garlic, shallot, and parsley and add to the bowl.
  7. Add grated cheese, butter and lemon zest. Mix all ingredients together to form a spread.
  8. Top 4 slices of bread with shrimp mixture evenly and broil in oven until golden brown and the mixture is melty.
  9. Remove from oven and serve.
